Ingredients:
1/2 cup rolled oats
1 cup mixed vegetables (carrots, peas, bell peppers, etc.), finely chopped
1 small onion, finely chopped
1 small tomato, chopped
1 green chili, finely chopped
1/2-inch piece of ginger, grated
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
A pinch of asafoetida (hing)
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
1 teaspoon oil
Fresh coriander leaves for garnish

Prepare Ingredients:
- Finely chop the vegetables, onion, tomato, and green chili.
- Grate the ginger.
Cooking:
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds and asafoetida, followed by chopped onions. Sauté until onions are translucent.
- Add grated ginger and chopped green chili. Sauté for another minute.
- Add mixed vegetables and cook until they are slightly tender.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Add rolled oats and stir continuously to coat the oats with the spices.
Finishing Touch:
- Pour in water gradually while stirring to avoid lumps. Cook until oats and vegetables are fully cooked and the mixture has a porridge-like consistency.
Garnish and Serve:
- Garnish with fresh coriander leaves.
- Serve hot with a squeeze of lemon if desired.
