Ingredients :

1 cup pearl barley, rinsed and drained
1 tablespoon olive oil
1 onion, finely chopped
2 carrots, diced
2 celery stalks, diced
1 bell pepper (any color), diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
6 cups vegetable broth
1 can (14 oz) diced tomatoes, undrained
1 cup green beans, chopped
Salt and black pepper to taste
Fresh parsley for garnish (optional)

Prepare Barley:

Rinse the pearl barley under cold water until the water runs clear. Set it aside.

Sauté Vegetables:

In a large pot, heat olive oil over medium heat. Add chopped onion, diced carrots, diced celery, and diced bell pepper. Sauté until the vegetables are softened.

Add Aromatics:

Add minced garlic, dried thyme, and dried rosemary. Sauté for an additional 1-2 minutes until fragrant.

Pour in Broth:

Pour vegetable broth into the pot. Bring the mixture to a boil, then reduce the heat to simmer. Cover and cook for about 15-20 minutes or until the vegetables are tender.

Add Barley and Tomatoes:

Add rinsed pearl barley and diced tomatoes with their juices to the pot. Stir well and let the soup simmer for an additional 20-25 minutes or until the barley is cooked.

Add Green Beans:

Stir in chopped green beans and cook for an additional 5-7 minutes until they are tender.

Season:

Season the vegetable barley soup with salt and black pepper to taste. Adjust the seasoning as needed.

Garnish and Serve:

Ladle the soup into bowls. Garnish with fresh parsley if desired.
