Ingredients :
2 medium sweet potatoes, peeled and diced
4 cups fresh spinach leaves, chopped
1 onion, thinly sliced
2 cloves garlic, minced
1-inch piece of ginger, grated
2 green chilies, finely chopped (adjust to taste)
1 tablespoon cooking oil (such as olive oil)
1 teaspoon cumin seeds
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
Salt to taste
Fresh cilantro leaves for garnish

- Prepare the sweet potatoes: Peel and dice the sweet potatoes into small cubes.
- Sauté aromatics: Heat the cooking oil in a large skillet or wok over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute until fragrant.
- Add sweet potatoes: Add the diced sweet potatoes to the skillet. Stir-fry for about 8-10 minutes, or until the sweet potatoes are tender and cooked through.
- Add onions: Add thinly sliced onions to the skillet. Sauté for a few minutes until the onions are soft and translucent.
- Add spinach: Add the chopped spinach leaves to the skillet. Stir-fry for another 2-3 minutes, or until the spinach wilts and cooks down.
- Season: Add ground coriander, turmeric powder, and salt to taste. Stir well to coat the vegetables with the spices.
- Garnish and serve: Garnish the Spinach and Sweet Potato Stir Fry with fresh cilantro leaves before serving.
- Serve: Serve hot as a main dish or as a side dish with rice or bread of your choice.
