Ingredients :
2 cups fresh spinach leaves, washed and chopped
1 cup mushrooms, sliced
1 small onion, finely chopped
2 tomatoes, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
1/2 teaspoon red pepper flakes (optional for heat)
1 tablespoon lemon juice
Grated Parmesan cheese for garnish (optional)

Saute Mushrooms:
- Heat olive oil in a pan over medium heat. Add sliced mushrooms and sauté until they release their moisture and turn golden brown.
Add Aromatics:
- Add chopped onions and minced garlic to the mushrooms. Saute until the onions become translucent.
Wilt Spinach:
- Add chopped spinach to the pan. Cook until the spinach wilts, stirring occasionally. This usually takes just a couple of minutes.
Season:
- Season the mixture with salt, pepper, and red pepper flakes (if using). Adjust the seasoning according to your taste.
Finish with Lemon Juice:
- Squeeze fresh lemon juice over the sauteed spinach and mushrooms. Toss well to combine.
Garnish:
- Optionally, garnish the dish with grated Parmesan cheese for added flavor.
Serve:
- Serve the spinach and mushroom saute as a side dish or on a bed of quinoa, rice, or your preferred grain.
