Ingredients:

2 cups fresh green beans, trimmed and halved
4 cups fresh spinach leaves, washed and stems removed
1 tablespoon low-sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon ginger, minced
2 cloves garlic, minced
1 tablespoon low-sodium vegetable broth or water
1 teaspoon cornstarch (optional, for thickening)
1 teaspoon olive oil (for cooking)
Sesame seeds for garnish (optional)

Prepare Vegetables:

Trim and halve the fresh green beans. Wash the spinach leaves and remove the stems.

Make Stir Fry Sauce:

In a small bowl, mix together low-sodium soy sauce, rice vinegar, sesame oil, minced ginger, and minced garlic. If you prefer a thicker sauce, you can mix in 1 teaspoon of cornstarch with a tablespoon of water in a separate bowl and add it to the sauce.

Cook Green Beans:

Add Spinach:

Add the fresh spinach to the pan and continue to stir fry for an additional 2-3 minutes until the spinach is wilted.

Pour Sauce:

Pour the prepared stir fry sauce over the vegetables. Toss everything well to ensure the vegetables are coated evenly.

Cook Sauce:

Allow the sauce to cook for an additional 2-3 minutes, letting it thicken slightly.

Garnish:

Garnish the low-fat spinach and green bean stir fry with sesame seeds if desired.

Serve:

Serve the stir fry as a nutritious and flavorful side dish or over brown rice for a complete meal.
