Ingredients :
2 cups lauki (bottle gourd), peeled and chopped
1 cup carrots, peeled and chopped
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ginger, grated
4 cups vegetable broth (low-sodium)
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon turmeric powder
Salt and pepper to taste
1 tablespoon olive oil
Fresh coriander leaves for garnish

Prepare Vegetables:
- Peel and chop the lauki and carrots into small pieces. Chop the onion, mince the garlic, and grate the ginger.
Sauté Aromatics:
- Heat olive oil in a large pot. Add chopped onions, minced garlic, and grated ginger. Sauté until the onions are translucent.
Add Spices:
- Add cumin powder, coriander powder, turmeric powder, salt, and pepper. Stir well to coat the onions in the spices.
Add Vegetables:
- Add chopped lauki and carrots to the pot. Stir and cook for 5 minutes.
Simmer:
- Pour in the vegetable broth. Bring the mixture to a boil and then reduce the heat. Cover and let it simmer for about 20-25 minutes or until the vegetables are tender.
Blend:
- Allow the soup to cool slightly. Using an immersion blender or a regular blender, blend the soup until smooth.
Adjust Consistency:
- If the soup is too thick, add more vegetable broth to achieve your desired consistency. Season with additional salt and pepper if needed.
Garnish and Serve:
- Garnish the low-fat lauki soup with fresh coriander leaves and serve hot.
