Ingredients:

1 medium-sized cauliflower, cut into florets
1 cup green peas (fresh or frozen)
1 large onion, finely chopped
2 tomatoes, pureed
2 tablespoons ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
1 tablespoon olive oil
Salt to taste
Fresh coriander for garnish (optional)

Prepare Vegetables:

Cut the cauliflower into florets and rinse them thoroughly. If using frozen peas, thaw them. If using fresh peas, shell them.

Sauté Aromatics:

In a large pan, heat olive oil over medium heat. Add cumin seeds and let them splutter. Add finely chopped onions and sauté until they become translucent.

Add Ginger-Garlic Paste:

Add ginger-garlic paste to the pan. Sauté for a minute until the raw aroma disappears.

Introduce Tomatoes:

Add pureed tomatoes to the pan. Cook until the tomatoes are well-cooked and the oil begins to separate.

Add Spice Powders:

Stir in turmeric powder, coriander powder, red chili powder, and garam masala. Cook for 1-2 minutes to blend the spices.

Add Vegetables:

Add cauliflower florets and green peas to the pan. Mix well to coat the vegetables with the spice mixture.

Cook:

Cover the pan and let the vegetables cook on medium heat. Stir occasionally to ensure even cooking. Cook until the cauliflower is tender but not mushy.

Season:

Season the cauliflower and green peas curry with salt to taste. Adjust the seasoning as needed.
