Ingredients:

Blanch Broccoli:
Bring a pot of water to a boil. Blanch the broccoli florets for 2-3 minutes until they are bright green and slightly tender. Drain and set aside.
Toast Almonds:
In a dry skillet, toast the sliced almonds over medium heat until they are golden brown and fragrant. Remove from the skillet and set aside.
Prepare Sauce:
In a bowl, whisk together low-sodium soy sauce, rice vinegar, honey or maple syrup, and sesame oil. Set aside.
Stir Fry:
In the same skillet, heat olive oil over medium-high heat. Add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
Add Broccoli:
Add the blanched broccoli to the skillet. Stir-fry for 2-3 minutes until the broccoli is coated with the garlic and ginger.
Add Almonds and Sauce:
Add the toasted almonds to the skillet. Pour the prepared sauce over the broccoli and almonds. Toss everything together until well-coated.
Optional Spice:
If you like some heat, add red pepper flakes to taste and toss again.
Garnish:
Garnish the low-fat broccoli and almond stir fry with sesame seeds and chopped green onions if desired.
Serve:
Serve the stir fry as a nutritious and flavorful side dish or over brown rice for a complete meal.
