Ingredients :
1/2 cup quinoa, rinsed and drained
1 cup mixed vegetables (carrots, peas, bell peppers), chopped
1 small onion, finely chopped
1 small tomato, chopped
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
Salt to taste
1 tablespoon cooking oil
Fresh coriander leaves for garnish (optional)
Lemon wedges for serving (optional)

Prepare Quinoa:
- Rinse quinoa under cold water to remove any bitterness.
- In a saucepan, combine quinoa with 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer until quinoa is cooked and water is absorbed (about 15 minutes).
Sauté Vegetables:
- In a separate pan, heat oil over medium heat.
- Add cumin seeds and mustard seeds. Once they splutter, add chopped onions and sauté until translucent.
- Add mixed vegetables and cook until they are slightly tender.
Combine and Season:
- Add chopped tomatoes to the vegetables and cook until they soften.
- Add cooked quinoa to the vegetables and mix well.
- Season with turmeric powder, garam masala, cumin powder, coriander powder, and salt. Stir to combine.
Garnish and Serve:
- Garnish with fresh coriander leaves (optional).
- Serve hot with lemon wedges on the side.
