Ingredients :
1 block (14 ounces) firm tofu, drained and pressed
1/4 cup fresh basil leaves
1/4 cup fresh cilantro leaves
2 tablespoons pine nuts
2 cloves garlic
2 tablespoons lemon juice
2 tablespoons nutritional yeast (optional)
Salt and pepper to taste
Cooking spray or olive oil

- Prepare the tofu: Cut the tofu block into slices or cubes, depending on your preference.
- Make the pesto: In a blender or food processor, combine the basil leaves, cilantro leaves, pine nuts, garlic, lemon juice, nutritional yeast (if using), salt, and pepper. Blend until smooth, adding a little water if needed to achieve a thick but spreadable consistency.
- Marinate the tofu: Place the tofu slices or cubes in a shallow dish. Spoon the pesto over the tofu, making sure to coat each piece evenly. Allow the tofu to marinate for at least 30 minutes, or longer for more flavor.
- Preheat the grill: Preheat your grill to medium-high heat. If using an indoor grill pan, lightly grease it with cooking spray or olive oil.
- Grill the tofu: Place the marinated tofu pieces on the grill. Grill for about 5-7 minutes on each side, or until grill marks appear and the tofu is heated through.
- Serve: Serve the Grilled Pesto Tofu hot, garnished with additional fresh herbs if desired.
