Ingredients :
1 cup brown rice
1/2 cup yellow moong dal (split yellow lentils)
1 tablespoon ghee or olive oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 small onion, finely chopped
1 teaspoon ginger-garlic paste
1/2 cup mixed vegetables (carrots, peas, beans), diced
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
Salt to taste
4 cups water
Fresh coriander leaves for garnish

Rinse Rice and Lentils:
- Wash brown rice and moong dal under running water until the water runs clear.
Pressure Cook:
- In a pressure cooker, heat ghee or olive oil. Add cumin seeds and mustard seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for another minute.
- Add mixed vegetables and cook for 2-3 minutes.
- Add brown rice, moong dal, turmeric powder, cumin powder, coriander powder, and salt. Mix well.
- Pour in 4 cups of water and close the lid of the pressure cooker. Cook for 3-4 whistles or until the rice and lentils are cooked through.
Garnish and Serve:
- Once the pressure is released, open the lid and fluff the khichdi with a fork.
- Garnish with fresh coriander leaves.
