Ingredients :
1 cup fresh mint leaves, washed and stemmed
1/2 cup fresh cilantro leaves, washed and stemmed
1 green chili, chopped (adjust to taste)
1 tablespoon lemon juice
1 teaspoon grated ginger
1 teaspoon roasted cumin powder
Salt to taste
Water, as needed

- Blend ingredients: In a blender or food processor, combine the fresh mint leaves, fresh cilantro leaves, chopped green chili, lemon juice, grated ginger, roasted cumin powder, and salt.
- Blend until smooth: Add a little water, as needed, to facilitate blending. Blend until you achieve a smooth and thick consistency.
- Adjust seasoning: Taste the chutney and adjust the salt and lemon juice according to your preference. You can also add more green chili if you prefer a spicier chutney.
- Transfer to a serving bowl: Once the chutney reaches the desired consistency and flavor, transfer it to a serving bowl.
- Serve: Pudina (Mint) Chutney is ready to be served as a condiment or dipping sauce with various Indian dishes like samosas, pakoras, or as a spread in sandwiches and wraps.
