Ingredients:

2 cucumbers, thinly sliced
1 bunch radishes, thinly sliced
1/4 cup fresh mint leaves, chopped
1/4 cup fresh coriander leaves (cilantro), chopped
Juice of 1 lemon
1 tablespoon olive oil
1 teaspoon honey or maple syrup (optional)
Salt and pepper to taste

  • Prepare the vegetables: Wash the cucumbers and radishes thoroughly. Trim the ends and thinly slice them. Place the sliced cucumbers and radishes in a large mixing bowl.
  • Add herbs: Add chopped fresh mint leaves and coriander leaves (cilantro) to the bowl with the sliced cucumbers and radishes.
  • Prepare the dressing: In a small bowl, whisk together the lemon juice, olive oil, honey or maple syrup (if using), salt, and pepper to make the dressing.
  • Combine: Pour the dressing over the cucumber, radish, and herb mixture.
  • Toss to coat: Gently toss all the ingredients together until well coated with the dressing.
  • Chill: Cover the bowl and refrigerate the salad for about 15-30 minutes to allow the flavors to meld together.
  • Serve: Once chilled, give the salad a final toss and serve as a refreshing side dish or appetizer.
