Boil Potatoes:
Boil the diced potatoes until they are just tender. Drain and set aside.

Add Potatoes:
Add the boiled and diced potatoes to the pan. Stir to combine with the aromatics.
Season:
Sprinkle ground coriander, turmeric powder, salt, and black pepper over the potatoes. Toss to coat them evenly with the spices.
Add Spinach:
Add the chopped spinach to the pan. Stir and cook until the spinach wilts and combines with the potatoes.
Adjust Seasoning:
Taste the stir fry and adjust the seasoning as needed. Add more salt and pepper if desired.
Garnish (Optional):
Garnish the low-fat spinach and potato stir fry with fresh cilantro if desired.
Serve:
Transfer the stir fry to a serving dish. Serve with brown rice or whole grain roti. Add a squeeze of lemon juice for extra flavor if you like.
