Ingredients :

1 cup split yellow moong dal (lentils), washed and drained
1 tablespoon ghee or olive oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 tomatoes, chopped
1-inch ginger, grated
2 cloves garlic, minced
1/2 teaspoon turmeric powder
1 teaspoon ground coriander
1 teaspoon cumin powder
6 cups vegetable broth or water
Salt and black pepper to taste
Fresh cilantro for garnish (optional)
Lemon wedges for serving (optional)

Prepare Moong Dal:

Rinse the moong dal under cold water until the water runs clear. Set it aside.

Sauté Aromatics:

In a large pot, heat ghee or olive oil over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until they become translucent.

Add Aromatics:

Add grated ginger and minced garlic to the pot. Sauté for a minute until fragrant.

Add Tomatoes and Spices:

Add chopped tomatoes, turmeric powder, ground coriander, and cumin powder. Cook until the tomatoes are soft and the spices are well-incorporated.

Cook Moong Dal:

Add the washed moong dal to the pot and stir well to coat it with the spices. Cook for 2-3 minutes.

Pour in Broth/Water:

Pour vegetable broth or water into the pot. Bring the mixture to a boil, then reduce the heat to simmer. Cover and cook for about 20-25 minutes or until the moong dal is soft and cooked.

Season:

Season the moong dal soup with salt and black pepper to taste. Adjust the seasoning as needed.

Optional: Blend Soup (If Desired):

For a smoother consistency, you can use an immersion blender to partially blend the soup. This step is optional, and you can leave the soup chunky if you prefer.

Garnish and Serve:

Ladle the moong dal soup into bowls. Garnish with fresh cilantro and serve with lemon wedges if desired.
