Ingredients :
1 cup mixed sprouts (moong, lentils, chickpeas, etc.)
1 small cucumber, diced
1 medium tomato, diced
1/2 red onion, finely chopped
1 small carrot, grated
1/2 bell pepper (any color), diced
1/4 cup fresh coriander leaves, chopped
1 green chili, finely chopped (optional for heat)
Juice of 1 lemon
1 tablespoon olive oil
Salt and pepper to taste
1 teaspoon roasted cumin powder
1/2 teaspoon chaat masala (optional)
1 tablespoon sunflower seeds (for garnish, optional)

Prepare Sprouts:
- If using store-bought sprouts, rinse them thoroughly under cold water. If sprouting at home, follow the instructions on the packaging.
Mix Vegetables:
- In a large mixing bowl, combine the sprouts, diced cucumber, tomato, chopped red onion, grated carrot, diced bell pepper, and chopped coriander leaves.
Prepare Dressing:
- In a small bowl, whisk together lemon juice, olive oil, salt, pepper, roasted cumin powder, and chaat masala (if using).
Toss Salad:
- Pour the dressing over the mixed vegetables and sprouts. Toss everything well to ensure an even coating of the dressing.
Adjust Seasoning:
- Taste the salad and adjust salt, pepper, or lemon juice as per your preference. If you like it spicier, you can add more green chili or a dash of hot sauce.
Garnish:
- Garnish the sprouts salad with sunflower seeds for added crunch (optional).
Chill and Serve:
- Refrigerate the salad for at least 30 minutes before serving to enhance the flavors. Serve chilled.
