Ingredients For Salad:

1 cup mixed sprouts (mung beans, chickpeas, lentils, etc.), cooked
1 ripe avocado, diced
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, finely chopped
1/4 cup fresh cilantro, chopped
1/4 cup feta cheese, crumbled (optional)

Ingredients For Dressing:

2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
Salt and black pepper to taste

Prepare Sprouts:

If using dried sprouts, cook them according to package instructions until they are tender. If using canned or pre-cooked sprouts, drain and rinse them.
