2 cups fresh basil leaves

4 medium-sized zucchinis, spiralized into noodles

Prepare Zucchini Noodles:

Spiralize the zucchinis into noodle shapes. Place the zucchini noodles in a colander, sprinkle with salt, and let them sit for about 15-20 minutes to release excess water. Afterward, rinse and pat them dry.

In a food processor, combine fresh basil leaves, pine nuts, minced garlic, nutritional yeast, lemon juice, water, salt, and pepper. Blend until you achieve a smooth and creamy consistency. Adjust the seasoning to taste.

Toss Zucchini Noodles:

In a large bowl, toss the spiralized zucchini noodles with the prepared pesto until the noodles are evenly coated.


Divide the zucchini noodles with pesto among serving plates. Top with cherry tomatoes, pine nuts, and fresh basil leaves if desired.
