Ingredients :

1 tablespoon olive oil
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
1 bell pepper (any color), diced
1 zucchini, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
6 cups vegetable broth
1 can (14 oz) diced tomatoes, undrained
Salt and black pepper to taste
Fresh parsley for garnish (optional)

Sauté Vegetables:

In a large pot, heat olive oil over medium heat. Add chopped onion, diced carrots, diced celery, diced bell pepper, and diced zucchini. Sauté until the vegetables are softened.

Add Aromatics:

Add minced garlic, dried oregano, dried thyme, and paprika. Sauté for an additional 1-2 minutes until fragrant.

Pour in Broth:

Pour vegetable broth into the pot. Bring the mixture to a boil, then reduce the heat to simmer. Cover and cook for about 15-20 minutes or until the vegetables are tender.

Add Tomatoes:

Add diced tomatoes with their juices to the pot. Stir well and let the soup simmer for an additional 10 minutes.


Season the mixed vegetable soup with salt and black pepper to taste. Adjust the seasoning as needed.

Optional: Blend Soup (If Desired):

For a smoother consistency, you can use an immersion blender to partially blend the soup. This step is optional, and you can leave the soup chunky if you prefer.

Garnish and Serve:

Ladle the mixed vegetable soup into bowls. Garnish with fresh parsley if desired.
