Ingredients :

1 cup brown basmati rice, washed and soaked for 30 minutes
2 cups mixed vegetables (carrots, peas, beans, corn), chopped
1 large onion, thinly sliced
1 tomato, chopped
2 cloves garlic, minced
1 teaspoon ginger, grated
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
2 cups water or vegetable broth
1 tablespoon olive oil
Salt to taste
Fresh coriander leaves for garnish (optional)

Prepare Rice:

Wash and soak brown basmati rice for 30 minutes. Drain the water.

Sauté Aromatics:

Heat olive oil in a pot. Add cumin seeds and let them splutter. Add thinly sliced onions and sauté until golden brown.

Add Garlic and Ginger:

Add minced garlic and grated ginger. Sauté for 1-2 minutes until the raw aroma disappears.

Add Vegetables:

Add chopped mixed vegetables and tomatoes. Cook for 3-4 minutes until the vegetables start to soften.

Spice it Up:

Add coriander powder, turmeric powder, garam masala, and salt. Mix well.

Add Rice:

Add soaked and drained brown basmati rice to the pot. Stir to coat the rice with the vegetables and spices.

Cook Rice:

Pour in water or vegetable broth. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 30-35 minutes or until the rice is cooked and the liquid is absorbed.

Fluff and Garnish:

Once the rice is cooked, fluff it with a fork. Garnish with fresh coriander leaves if desired.

Serve:

Serve the low-fat vegetable brown rice pulao as a wholesome and nutritious meal.
