Ingredients:

1 cup dry green or brown lentils, cooked
4 cups fresh spinach leaves, washed and chopped
1 onion, finely sliced
2 cloves garlic, minced
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 tablespoon olive oil
Salt and black pepper to taste
Lemon wedges for serving (optional)

Cook Lentils:

Cook the lentils according to the package instructions. Drain any excess water and set aside.

Sauté Aromatics:

In a large pan, heat olive oil over medium heat. Add cumin seeds and let them splutter. Add finely sliced onion and minced garlic. Sauté until the onion is translucent.

Add Lentils:

Add the cooked lentils to the pan. Stir to combine with the aromatics.

Season:

Sprinkle coriander powder, turmeric powder, salt, and black pepper over the lentils. Toss to coat them evenly with the spices.

Add Spinach:

Add the chopped spinach to the pan. Stir and cook until the spinach wilts and combines with the lentils.

Adjust Seasoning:

Taste the stir fry and adjust the seasoning as needed. Add more salt and pepper if desired.

Serve:

Transfer the spinach and lentil stir fry to a serving dish. Serve with lemon wedges on the side for an extra burst of flavor.
