For Grilled Tofu:

Prepare Tofu:

Press the tofu to remove excess water, then slice it into rectangles or cubes.

Make Marinade:

In a bowl, whisk together low-sodium soy sauce, rice vinegar, olive oil, sesame oil, grated ginger, minced garlic, and red pepper flakes if using.

Marinate Tofu:

Place the tofu slices in a shallow dish and pour the marinade over them. Allow the tofu to marinate for at least 30 minutes.

Grill Tofu:

Preheat your grill or grill pan. Grill the marinated tofu slices for about 3-4 minutes on each side or until grill marks appear and the tofu is heated through.

Garnish (Optional):

Garnish the grilled tofu with fresh cilantro if desired.

For Peanut Sauce:

Mix Ingredients:

In a small bowl, whisk together natural peanut butter, low-sodium soy sauce, rice vinegar, maple syrup or honey, and sesame oil.

Adjust Consistency:

If the peanut sauce is too thick, add water a little at a time until you reach your desired consistency. Whisk well to combine.

Serve:

Serve the grilled tofu with a drizzle of peanut sauce on top or on the side.
