Clean the portobello mushrooms with a damp cloth and remove the stems.
In a small bowl, whisk together balsamic vinegar, low-sodium soy sauce, olive oil, minced garlic, dried thyme, salt, and black pepper to create the marinade.
Place the portobello mushrooms in a shallow dish, gill side up. Pour the marinade over the mushrooms, ensuring they are well-coated. Let them marinate for at least 15-20 minutes.
Preheat your grill or grill pan over medium-high heat.
Grill the portobello mushrooms for about 5-7 minutes per side or until they are tender and have grill marks.
Optionally, you can baste the mushrooms with any remaining marinade during grilling for extra flavor.
Garnish the grilled portobello mushrooms with fresh parsley if desired.
Serve the mushrooms with lemon wedges on the side for a zesty touch.
