Ingredients :

2 medium-sized beetroots, cooked, peeled, and diced
2 tomatoes, diced
1 small red onion, thinly sliced
2 tablespoons chopped fresh cilantro (coriander) leaves
Juice of 1 lemon
1 tablespoon olive oil
Salt and pepper to taste
