Ingredients :
1 cup masoor dal (red lentils), rinsed and drained
4 cups water or vegetable broth
1 onion, finely chopped
2 tomatoes, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, grated
1 green chili, chopped (adjust to taste)
1 teaspoon cumin seeds
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
1 tablespoon cooking oil (such as olive oil)
Fresh cilantro leaves for garnish
Lemon wedges for serving (optional)

- Prepare the lentils: Rinse the masoor dal (red lentils) under cold water until the water runs clear. Drain well and set aside.
- Sauté aromatics: Heat the cooking oil in a large pot over medium heat. Add the cumin seeds and let them splutter for a few seconds. Then add minced garlic, grated ginger, and chopped green chili. Sauté until fragrant.
- Add onions and tomatoes: Add the finely chopped onions to the pot. Sauté until they turn translucent. Then add the finely chopped tomatoes. Cook until they soften and break down, forming a thick paste.
- Add spices: Stir in ground coriander, turmeric powder, red chili powder, and salt to taste. Mix well to combine with the onion-tomato mixture.
- Cook the lentils: Add the rinsed and drained masoor dal (red lentils) to the pot. Stir well to coat them with the spice mixture. Pour in water or vegetable broth, stirring to combine.
- Simmer: Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 20-25 minutes, or until the lentils are tender and cooked through.
- Blend (optional): For a smoother consistency, you can blend a portion of the soup using an immersion blender or transfer a portion to a blender and blend until smooth. Be careful as the soup will be hot.
- Adjust seasoning: Taste the soup and adjust the seasoning with salt or additional spices if necessary.
- Garnish and serve: Garnish the Masoor Dal (Red Lentil) Soup with fresh cilantro leaves before serving. Serve hot with lemon wedges on the side, if desired.
